Under Jewish tradition, converts are fully Jewish, subject to the same obligations as any other Jew. If a child is converted by their parents as an infant (perhaps because the child is adopted as an infant, or perhaps because the mother converted after giving birth) the child is allowed to reject that conversion upon reaching the age of 13 (the age of bar mitzvah). It is impossible to convert to the traditional priestly class, the cohenim. Many people named Cohen, Kahan, Kaplan, and similar names are cohenim. Recall that Moses married a convert (Tzipporah) and King David was descended from a convert (Ruth).
