I'll assume you are speaking about the Mormon Pioneers adapting to the environment in Utah? They made irrigation ditches to bring water from mountain streams down to the valleys to water their crops. They learned to build out of adobe and mud since lumber was extremely scarce. They also grew crops requiring warm climates, such as cotton and citrus, in the south, while growing crops for colder climates in the north. This way they could share and become self sufficient, not requiring anything to be shipped to them from the east.
Please keep in mind that this only applies to members of the Church of Jesus Christ of Latter-day Saints (commonly called "Mormons") who happened to live in Utah from about 1847 to 1900. The Church was headquartered in the East and Midwest from 1830 to 1846. After 1900, shipping from the east was much easier and the land had been adapted sufficiently so that all this work wasn't required. Since the earliest days of the Church, not all members have lived in Utah, so this certainly doesn't apply to all Mormons.
