The Torah, found in every synagogue that can afford to procure its own, is hand-written on several panels of parchment, which are then sewn together to form a long scroll. The parchment panels are made from the cured hides of a kosher animal, such as cow or sheep.
Originally, as with all parchment in the near east, goat skin was used, specially tanned so that it could be written on. Papyrus was not just used in Egypt; it was also used throughout the eastern mediterranean and near east, and, the substance should not be confused with paper because there IS a difference. You can't for example use a number 2 pencil, or a modern day pen on papyrus; the surface is much too coarse, however it lets itself well to brush strokes. Ancient near eastern scribes, including the temple priests of old, usually made a rough draft of papyrus, several actually, and a final draft on animal skin, usually specially tanned goat skin. The early Tanakhs were all scrolls made out of goat skin.
Also, when originally given to Moses, the Torah was not "written," it was handed down by memory.
