The other answer is correct, but I would like to add one more reason. The reason why rabbis discourage those who wish to convert to Judaism is because once one converts to Judaism, he cannot convert back to his original religion or another religion. He is a Jew his entire life and their is no turning around. Not only that, but also his children will remain Jewish, and their children (unless he marries a non-Jewish woman).

According to traditional halakha (Torah-law), it depends on your mother. If she's Jewish, you are too. Her status depends on her mother, and so on. If your maternal great-great-(etc.)-grandmother was Jewish, through the female line, then you are too. If she converted to Judaism during or before her pregnancy, that child and those born later are Jewish (based on Talmud, Yevamot 78a-b). It is important to note that Judaism does not recognize the concept of being a "half-Jew", you are either a Jew or you are not a Jew.
