In the book of Leviticus Ch. 16 v21-22 it states that Aaron laid his hands upon a goat and symbolically placed all of the sins of Israel upon the head of the goat and sent it off into the wilderness. The term Scapegoat comes from this action. i.e letting someone else take the blame. The goat was sent into a field symbolizing that the Lord would remember their sins no more.
The Bible takes on many symbolic terms, this was so that the people could understand what the Lord or the prophets were saying. The people being of lowly nature were able to understand better if things were explained in terms they understood.
Unfortunately we in our time are so steeped in worldly things that the scriptures are difficult for us to understand, unless we have the Holy Spirit to guide us.
The bible uses goats to symbolize evil in many instances
Pigs were considered unclean and not suitable for sacrifice or human consumption.

well, yes. in the bible, sheep are viewed as the great crowd: the good number of people that will be saved when armageddon comes. the goats, however, are viewed as unclean, not worthy of sacrifice, and represent the bad people on the earth.
According to the Bible, animals that are considered clean and can be eaten include those with cloven hooves and that chew the cud, such as cows, sheep, goats, and deer. Animals that are considered unclean and should not be eaten include pigs, rabbits, and shellfish.
In the Bible, goats are often used symbolically to represent sin and the separation of the righteous from the unrighteous. In the Old Testament, goats were sometimes used as sacrificial offerings to atone for sins. In the New Testament, goats are mentioned in parables as a way to illustrate the final judgment and the separation of the righteous from the unrighteous. Overall, goats in the Bible serve as a reminder of the importance of repentance and living a righteous life.
The Bible says that we can eat animals that have cloven hooves and chew the cud, such as cows, sheep, and goats. It also lists specific types of fish and birds that are considered clean for consumption.

Goats are mentioned in the Bible as sacrificial animals and symbols of sin and atonement. They were often used in rituals to atone for sins, symbolizing the transfer of sin from the people to the animal. Goats are also associated with the concept of separation, as in the story of the sheep and the goats in the New Testament, where they represent the righteous and the unrighteous.
when they milk the goats the goats udders can be infected, and that means bad milk - which then gets made into bad cheese.
