Because some animals are killed or poached just for their fur or ivory, I suppose if you are killing a sheep or something for it meat. Its probably all right to sell It's skin as a by-product because you are getting the most out of the death of the sheep.

But religions like Hinduism don't eat meat because of their beliefs that in a next life they might come back as a animal and they should respect every living thing.
