Hello
The reason Peter cut off the man's ear is mostly due to his personality, which is due to his fear, and his over confidence.
Peter and the other disciples on seeing the mob about to take Jesus asked whether they should fight; but Peter not waiting to find out, acted, cutting off one man's ear with a sword. Read Matthew 26: 51,52; Luke 22: 49-51; John 18: 10,11.
Peter was also the one who denied even knowing Jesus three times, due to his fear, but he finally felt remorse , broke down and wept bitterly. Read Matthew 26: 69-75.
However, having " returned " from fall into the snare of fear caused largely by his over-confience (Read Proverbs 29: 25 ) Peter found great satisfaction in carrying out God's requirements in the Christian congregation, and wrote two inspired letters.
Proverbs 29: 25 confirms: " Trembling at men is a snare, but the one trusting in Jehovah God will be protected.
The lesson to be learnt by Peter's experience is ; There could be times in our life that our fear of men could have negative influence over our choices.
Proverbs 29: 26 reads " many seek an audience with a ruler, but it is from Jehovah that man gets justice.
Genocides were able to be executed, most of the time by our fear that has influened our choices and actions.
So to answer your question of why did Peter cut off a man's ear, it is mostly due to his not thinking twice before taking action and his fear of men that made him disown Jesus three times.
Kind regards.

HIMSELF! He cut off his own ear! Gosh!
No roman soldier actually had his ear cut off. The incident occurred as soldiers came to arrest Jesus, and with them were some officials from the chief priests and Pharisees. The gospels of Matthew and Luke do not record the name of the disciple who cut off the ear of a servant of the high priest. John 18:10 records that it was Simon Peter, and that the servant's name was Malchus.
MALCHUS
The soldier's ear was healed by Jesus when one of His disciples, identified as Peter in the Gospel of John, cut it off during the arrest of Jesus in the Garden of Gethsemane. Jesus intervened by touching the ear and restoring it to its rightful place, demonstrating His compassion even in the face of His impending crucifixion. This act underscores His message of love and forgiveness.
