If you are using a curry sauce then what you are making will be very different from traditional lasagna, but might be interesting. The obvious cheese choice with curry is paneer, so I'd say that. However, Paneer does NOT melt. I guess it depends on what you mean by curry. You mean like an Indian Garam Masala, or something made with curry leaves, or Thai curry?
