Szechwan cooking is distinct from other Chinese cooking mostly from its use of hot peppers.
The most famous Szechwan chicken recipe is called Kung Pao chicken. The chicken breast is cut into strips and cooked with garlic, ginger, green onions, dried chiles, szechwan pepper and peanuts. A sauce of soy sauce, sesame oil, sugar and vinegar (a sweet-and-sour sauce) thickened with potato flour or cornstarch is poured over it.
