Turkey is famous for a wide variety of foods. Probably the most famous is şiş kebab, which is a grilled skewer of meat (usually beef, lamb, or chicken) served with peppers and tomatoes. Turkey is also famous for sarma, which are known outside of Turkey by the Greek name "dolma" or "grape leaves". Turkish sarma, may be filled with rice, meat, raisins, nuts, and spices. Additionally, the outside is not necessarily grape leaves and can be cabbage, peppers, or tomatoes. There is also lahmacun and pide which are variations on Pizza, usually using spicier sauces than tomato sauce if any at all and using only toppings (like meat or egg) without cheese.

Turkish food is famous for its salads like soslu patlican (eggplant salad) and cacık (a yoghurt dish with cucumbers and dill) in addition to typical Middle Eastern mezze like baba-ghanoush, humus, taboule etc.
