Basically, they did whatever needed to be done. This would include: housekeeping, maid, butler, valet, any sort of manual labor (planting, clearing trees/logging, harvesting, caring for livestock, blacksmithing, etc.) nannying and/or childminding, cooking, and whatever else was required.
Well, in the book Rosa Parks: Young Rebel it said that the slaves had to take the worms off the cotton plants and harvest them.
