Plants would die because they need the sun for photosynthesis, to produce their energy. Plant-eating animals would die because there would then be no plants for them to eat. Then humans would start dying from lack of the nutrients in fruits and vegetables, and in the animals we eat that eat plants, such as cows. The earth's atmosphere would of course also become unbearably cold, which would also kill off life from this planet.

However, long before the sun dies, leaving us with no sunlight, it would have expanded into a red giant, swallowing the inner planets, including Earth, and burning them into a crisp.
