Why do plants stop erosion?

Sometimes, plants can grow in the cracks of rocks and stuff and leach minerals as they grow. They continue to grow, and pieces of rock chip off. Then, the pieces eventually get even more eroded by rain and wind and stuff.

However, plants also help stop erosion. Their roots will hold the soil together and as water rushes by during a strong rain, they keep the soil from getting washed away, and they use some of that water for themselves.
