The green color in grass (green plants in general) is caused by chlorophyll. Chlorophyll is one pigment in plants' leaves that absorbs light (all but the green, obviously, since the green is reflected why it appears green to us). There's also other cellular organs which absorb light, like beta-carotine. All of them have different absorption spectrae, why they reflect different regions of the spectrum of visible light, which is why they might appear orange or yellow to us; those don't absorb orange / yellow frequences.
So when the light changes in the course of the year, the activity of the particles is shifted, chlorophyll is less active than others may be, so the leave appears to be the color of those cells, rather than the color of the chlorophyll which is getting comparatively less.
