well technically it is not a renewable resource because it will run out, and when it does there will be no way to "renew" it. With that in mind, it makes sense to think of it as a renewable because the lifespan of the sun is so long. It will probably still be burning long after humans are around, it will at least be thousands of generations away for us.

Also, the amount of sunlight that we use, does not effect how much sunlight we get or how long it will be around. This is different then non renewable resources, where using ore means that we start to run out faster.
