Multiple reasons:

Liquidating assets from India, and investing funds in businesses- usually convenience stores, due to their high profit margins. (Gas stations only make 1 cent per gallon, by the way)

It also comes down to people lacking patience and a hard work ethic - owners often work 12-18 hours per day/7 days a week depending on store, and have to work hard and save up for years prior to even thinking of owning a business. You won't find that much in American culture where weekends, vacations and luxuries are valued higher.

Profits from first store are reinvested into a second one, where a relative might work- to ensure employees do not swindle funds. Second to third, etc.

Further reasons: turnkey nature of operations, recession proof business model - people need their coffee, soda, cigarettes, etc..

You may see a simple person behind a register - behind the veil there are often luxury cars, and lavish homes after many years of hard work.
