Check its stat called "apitude". This number should be 60 for your Knightmon, because this stat determines your Digimon's maximum level, and the only way to raise the stat is by digivolving and degenerating (no wonder that stat never went up!). It is a controversal topic with no definitive answer.

Not unless there's a completely different set of Japanese episodes from what I've seen. Whoever told you that was probably just a crazed fan obsessed with the couple. Most evidence of Takeru (TK) and Hikari (Kari) liking each other that way (i.e. "I care about you." from Ep. 13) was actually added by the English dubbers.
