It does not seem likely that Erin Hunter will end the series when Firestar dies. As you may have noticed, the stories do not all center arround him anymore and there are plenty of other cats to work with. You may have also noticed that many of the cats who died in previous series still show up often in the stories in the form of a cat from Starclan. For example, Spottedleaf died in the first series, yet she still plays a role in many of the stories in the latest series.
In any case it does not seem likely that the series will end because of Firestar's death.
I think you did a good job on explaining it. I highly doubt it will end the series when he dies. (Although it will be very sad and I will throw the book at the wall) I also think they might make another series from Firestar's point of view for all the books that did not see from his view (New prophecy, power of three etc.) But I am not positive. Yeah I agree. I really love Firestar. I don't want hom to die. I like him as a leader. But if he dies, the warrior book will continue. (Alothough there is no more good warriors to pick!) I would cry for centuries if he was gone. He has only a couple lives left... use them carefully.
Firestar, as of Sign of the Moon, is on his last life. But I highly doubt the Erins will end it because Firestar dies. Going off subject from Firestar dying, the Erins have hinted they might end the series after the Dark Forest war. Half of the clan cats, and the clans will just break apart.

Firestar does die in The Last Hope, and the story will not continue after that, for a while at least. But that doesn't mean no more Warriors, thank StarClan, there will be a fifth series called Dawn of the Clans that takes place generations before.
