If you just want hot peppers for eating later, why not just pickle them. No freezing, frying or cooking is involved. Place raw sliced hot peppers in apple cider vinegar or the vinegar of your choice. There are so many pickling brines out there. Let the vinegar age the peppers for about 2 to 4 months and they are good for years in a sealed mason jar. This hot vinegar is what people in the southern united states call pepper sauce that goes well on turnip or collard greens.
