Lard

What is the difference between lard and dripping?

Lard is made from rendered and processed pig fat. Drippings are fat from any meat (including pork), which collect in the bottom of a roasting pan. Drippings are predominantly used as a flavor component, or as a starter for a roux, whereas lard is primarily used for frying.

Not really; lard melts at a higher temperature than body temperature, which means it leaves a cloying taste in the mouth. (Butter melts at body temperature, making it perfect for icing). Also, lard tastes slightly unpleasant when used in large quantities.

Is armour lard good for lye soap making?

Absolutely! It is cleaned lard which I find has no smell to it. I use it in my soap recipes all the time because it is a very cheap alternative to some of the more expensive oils. As a matter of fact I just purchased 2 more large containers to make soap with it. Did you know that pure lard soap with 0% superfatting is the best laundry soap?

Here is a great lard recipe I use all the time using Armour Lard for my bath soaps.

approx 4 lb batch of soap

Armour Lard 24. oz
Coconut Oil 12. oz
Palm Oil 12. oz
Lye 7.28 oz

After soap has come to trace superfat with either shea butter or cocoa butter at 2.4 oz

This makes for a very lathery and conditioning hard bar of soap.

I hope this answers your question and HAPPY SOAPING!

Sincerely,
xhappyx

Can you fry french fries in lard?

You can certainly fry french fries in hot, melted lard. For years McDonalds often used lard for cooking their french fries - giving them a flavor that most of their customers found superior to the fries their competitors cooked in vegetable oil. Frying French fries in beef tallow lard, or other animal fats adds saturated fat to them but gives them a flavor that is difficult to reproduce when they are fried in vegetable oil.

Is white vegetable fat better than lard and why?

Partially hydrogenated oils are very bad for you and are banned in some European countries; they contribute more than saturated fats to heart disease.

Coconut oil has some health properties; the lauric acid contributes to heart health.

Pick fresh unsaturated fats instead of animal fat or partially hydrogenated oils. Coconut oils and avocado oils are two vegetable based saturated fats that are good for you.

There is a lot of evidence that excessive saturated fat contributes to heart disease and cancer.
