PC. The 360 version is far, far behind, it will take many updates for it to catch up with the PC version, and even then the PC version will be further along still since it's always the most up to date version.

Also, the PC version can use mods, which the 360 one can't.

If you're saying that you won't stop swimming then it could be that your space bar is stuck. This happens to me sometimes if I open an application that takes a few seconds to start up (such as skype) and return to playing the game while I wait. I would suggest you unpause the game and press space.

No, Diamond is the strongest, followed by Iron. Chain is next, offering only a tiny amount more protection than gold.
