There are no specific days on which Beedle sells Golden Ship parts. I have tried to set my DS to one day (day X) and look what parts he was selling. I then set the DS to another day (day Y) and looked what parts he was selling. I then, finally, set it back to day X and the parts he was selling then was not the same as the parts he was selling the first time I was on day X.
So, all of the parts are generated randomly. But there are of course other ways to find Golden Ship parts than visiting Beedle...
