Practitioners of Vodun (the real name for "Voodoo") worship the same God as Christians, Muslims, and Jews. They just believe different things about Him/Her.
They believe in lesser gods whose standing is somewhat similar to Angels, called Orishas or Vodun. The word "vodun" means "the spirits" or "the spirits of nature". The Vodun embody the various forces of nature.
Practitioners of Vodun and related faiths in Africa and the diaspora believe that God is truly infinite, unfathomable, and all-powerful. They understand that mere mortal humans cannot possibly relate to Him/Her. So instead of asking Him/Her to override the forces of nature (which would be a blasphemous implication that He/She makes mistakes), they approach the forces of nature to help them to solve problems or just to show thankfulness for blessings or lessons learned.
In Haitian Voudou, a type of Vodun practiced in the diaspora, the lesser gods are called loa. They use the images and attributes of Catholic saints to represent them. The integration of Catholic saint Image in Voudou goes back to the colonial period. The whites forbade the slaves to practice their ancestral faiths and the Catholic religion was imposed on them. So in order to serve the spirits and not get caught by their masters, they integrated Catholic saints' images into the religion to show the masters that they were praying to the saints that they were required to, when in fact, deep inside their hearts ,they were praying to the gods they really belived in.

A long time ago, Pata Palo, Ogun Toyo, Oba Tola', and ect, were leaders. Ochanle is a leader. Somehow, its easier to find a follower santero than a Leader Santero.
Some people will argue that Babalawos are ' high priests', but they are men initated into the mysteries of Orunmilla by receiving Ifa, and not Ocha as the Santero/Olorisha has. Although it is possible to make Ocha before making Ifa, and it makes these people highly sought after and potentially very knowledgable/powerful. It is, however, not possible to make Ifa and THEN make Ocha. It's because of this that some people regard Babalawos as ' high priests'.
Although there are no real high priests, if one would have to pick, the Oba/Oriate would take that title. These are Santeros that have undergone vigurous ceremonies, and have memerized ( and understand) all Lucumi Ceremony, and can work the Ita' ( i think they read Ita, I think Italero is another name for the Oriate that does the Ita for the new initiates.... not sure about it though..)

You have to have intentions behind the actions toward the voodoo doll for the result to take effect. If the doll is accidentally damaged, it may be best to apologize to the doll (some believe that guardian spirits, or part of a person/person's energy can inhabit personalized items), and do your best to repair it. But it is doubtful that anything will happen as a result to accidental damage.

The question itself points in many different directions.
Jazz musicians have long been ethno-sponges. Though our persistent will to categorize will always generate debate as to "what is and what isn't", there is little question that musicians themselves often look for ways to expand their horizons, or at least their tools. From a purely technical standpoint we may survey the global scene from a Borg-ist drive to assimilate.
From a more anthropological perspective, there is the fascinating development of parallel histories based on African traditions mutating within new circumstances.
Call and response forms, field hollers, dance/fight games, various tensions between secular and non secular contexts, all were present in one way or another across "the new world". IE places where slaves were brought. But the specific forms and their evolutions vary.
(including of course, the very means of music making---what remained the berimbau in Bahia became the banjo in the southern US, or so goes one history.)

Initially however, i think we need to tease out important distinctions between participants and performers. My understanding is that the relationship between dancers and musicians in live settings is more dialogical, or dialectical perhaps in many African traditions than in the contemporary US. That is to say, it is a "dancing with" rather than a "dancing to".
My suggestion is that we cant speak of , say, capoeira chants/music distinct from the movement form itself.
(Clearly i am focusing here on a particular subdivision of the question. Santeria's Yoruban cousin in Brazil is Candomble, which has all sorts of intersections with capoeira. However, it is the irreducible form of Capoeira movement/Capoeira music that i will henceforth try and attend to)
Jazz in the US has (in general) mutated into something which, though requiring intense and active listening engagement, is largely performed to a seated audience.
These days, Capoeira music is indeed listened to in car and home stereos and perhaps even at concert halls, just as capoeira moves can be seen in movies and MTV videos and advertisements, as we see the classic process of divorce from the signifier and the signified . But still, the dominant form of the music is one of absolute symbiosis with the movement form.
Thus i think we must speak of capoeira as a single multi faceted entity. Though, as i initially suggested, one might indeed listen to, for instance, a berimbau player strictly to exploit the marvelous use of variation and timbral nuance ( or whatever...) , it is when considering the entire capoeira experience with an eye/ear towards parallels in the North American development of jazz my own interest becomes particularly stimulated.
