Lots and lots of stars, often with occasional gas and dust. Perhaps with a black hole at its center, although such is considered optional for smaller galaxies. And most believe that some form of dark matter (likely more gas, albeit of a sub-atomic nature) also plays a part in the mass of a galaxy.

Prior encounters with other galaxies can encourage patterns such as arms or bars to form, although direct collisions can result in highly irregular shapes.

I am not entirely sure what you mean by a galaxy sucking you up. That's a term that is sometimes used, sort of informally, for black holes - and yes, the galaxy contains several of those.The galaxy as a whole has a gravitational attraction, which keeps us (the Solar System) in orbit. Also, please note that we are already INSIDE the galaxy (the Milky Way galaxy, to be precise); so it really doesn't make much sense of talking about the galaxy "sucking us up".

Not much is currently known about dark matter. We know that there is some unknown substance that makes up 80-90% of a typical galaxy or galaxy cluster - and we know so by its gravitation - for example, by observing the rotation of a galaxy, or by gravitational lensing.

If you mean, what are they composed of, galaxies consist of stars, dust, gas, and black holes - but MAINLY they are made out of invisible stuff (dark matter), which makes up about 80-90% of a typical galaxy's mass.
