A website called brickhouse security has a product that works with all phones with a sim card. Its a USB device that reads the sim card. Doesnt matter if he/she tried to delete them if they arent overwritten then you can read the deleted text messages. The product is around $150

You can save your messages to the SIM card but once you click delete all messages they will go away...I'm pretty sure. I have not yet found a way to completely lock a message so that when you delete your messages, it will stay. If you're talking about saving something like a picture message, this is somewhat possible. When you've selected the picture, click options then use then save to internal or external memory(whichever you choose). Otherwise, I don't think you can completely lock a regular text message from deleting.
