You can't that's the point of incognito..... you could use regular Google Chrome if you want to track history, or use a keylogger

On windows 8 machines, you can restore browsing history by first opening your internet browser and navigating to the menu, located on the top bar. From there, you can click "preferences" and navigate to the history page, clicking "delete cookies"

To find your last sites visited you go to your history tab and it will show you all the sites you have visited for the last week unless you are browsing in an incognito window.
