The first one is already open for you. To open the second one, you have to complete the trophy room by digging up all the supplies in the first park. When it's complete, the second park will automatically open. Then to unlock the third park, you have to dig up all the bones to complete a t-rex skeleton.
I don't know how to unlock the 4th park yet, I haven't made it that far.
