I have been in the business of repairing well water systems for over 30 years. Your question is a common one believe it or not.
The pressure switch is not matched properlly to the well tanks air pressure. In addition the pipe fitting that goes to the pressure switch is almost clogged shut, causing an erratic sense of water pressure signal being sent to the pressure switch.
If this problem has been going on for a while, it is possible that the submersible typw well pump has been short cycling and this may of caused over heating of the pumps motor. Over heating pump motors are thermally protected and will shut off, cool down and re-start.
How To Fix It ?, New pressure switch, clean the pipe fitting to the switch. Put air pressure in the empty well tank that is only 2 pounds less the the ON setting of the switch range you are using.
If the pump has been over heating for too long of a period of time, New well pump.

could be many of things. debris in fuel tank, looses vaccum pressure,dirty fuel filter, dont know what kinda truck you got but most likely its a fuel blockage some where
