UT can stand for both, along with the University of Toledo and the University of Tulsa.
If you were to abbreviate both of the teams, I would go with doing "TEX" for Texas and "TENN" for Tennessee to avoid confusion.

The University of Tennessee is bigger than Tennessee Technical University, based on size & the amount of students that are currently enrolled at UT.
UT can refer to many different establishments, including the Universities of Tampa, Texas and Tennessee. Schedules for University sporting matches are easily available on the Universities' websites.
