The simplest way would be to head east on I-10. You'll eventually cross into Texas near El Paso.
If you specifically want to go to Amarillo or someplace near that, you'd probably do better to take I-15 up to near Barstow and then transfer to I-40 when you get the chance. However, Amarillo is really the only significant city for which that route is clearly better, with Lubbock and Wichita Falls as maybes. For anything south of those two cities, I-10 at least as far as El Paso is definitely your best bet, and especially for any of the major cities (Houston, Austin, San Antonio, Dallas/Ft. Worth ... though you should leave I-10 for I-20 past El Paso if you're headed towards DFW).
