Wisconsin did not get its nickname "The Dairy State" for its quantity of dairy products, but for the quality of those products. Something close to a third of the world's finest cheeses are Wisconsin-made. The climate, the soil, and the know-how are all important factors in this world-class cheese-producing region. Wisconsin is one of only a few states that has an extensive and and demanding cheesemaker apprenticeship program.

Some of the surprising agricultural products exported from Wisconsin include whey (far more than curds), peas for canning, and soy sauce. And although most people think of cranberries as a New England thing (thanks a lot, Ocean Spray!)--most cranberries produced in the United States come from northern and central Wisconsin.
