The Mean Green Curried Egg and Salad Supreme

Curried Egg

Serves 2 people

Ingredients

• 2 tablespoons of creamy mayonnaise.
• 2 hard boiled eggs.
• 2 teapsoons of curry powder (or more if you like it hot)
• Desired amount of salt (not too much!)
• Desired amount of pepper (not too much!)

Method

1. Hard boil two eggs for five minutes.
2. Run eggs under cold water.
3. Peel and cut.
4. Place in bowl with mayonnaise, salt, pepper and curry powder.
5. MASH up.
6. Place on sandwich.

Salad Sandwich

Ingredients

• 1 cup of lettece chopped.
• 1/2 a tomato diced.
• 2 tsp chives (finely chopped)
• 4 slices of fresh bread.

Method

1. Chop up ingredients.
2. Place on bread.
3. Add curried egg.
