One of the reasons for raising a specific breed of sheep is if that breed of sheep does well in that climate. I am in a very wet climate and the most popular breed of sheep here is Romney. Romney sheep were developed in the Romney marsh of England and do very well here in the Pacific northwest of USA. I have crossed my Romney with Borderlester so a slightly larger frame and wool with a little luster to it.
Also a significant factor in deciding what breed to raise, is what market are you raising sheep for. I am raising sheep to be processed at a professional USDA processing plant. Where it will be put in a grocery store or I will sell it at a Farmers market. I am charged by the animal, so a large frame is more economical.
In the Middle East it is custom for folks to butcher their own lamb for festivals and a large family may consume a whole small sheep in a few days with minimal concern about refrigeration. So in the Middle East a smaller lamb with excellent taste is what the Shepards are breeding for.
