the return flight will go from DFW to Brisbane and refuel before continuing on to Sydney, due to the prevailing headwind direction over the Pacific.
There are multiple ways to fly from Perth to Toronto, but two that have all non-stop flights: The first and more traditional is to fly from Perth to Melbourne, Sydney or Brisbane and from there fly to Los Angeles, connecting to a flight to Toronto. Qantas flies this route; VirginBlue and VAustralia can get you to Los Angeles from Perth. The second way is to fly west on Emirates: non-stop from Perth to Dubai, connecting to a non-stop flight to JFK in New York and on to Toronto. Emirates is the more luxurious airline and their pricing tends to be higher than VAustralia and Qantas, but occasionally there are sale fares that make Emirates the least expensive airline for the flights.
The International airport offers flights from New York to Australia. The regional airport also offers flights from New York to Australia, depending on witch airline you are actually looking for.

If you fly the most direct route (ie Brisbane > Singapore > London Heathrow) flight time is 22hrs 10 mins but there will also some stop-over time in Singapore. Alternatively you could for sacrificing the extra 1hr 30 mins take the A380 all the way to London from Sydney by flying there first. Personally I think this is worth it over flying the older A330 classes which qantas operate on Brisbane > Singapore route. Currently Qantas, Emirates and Singapore Airlines fly A380 from Sydney to London Heathrow vi various ports. See the related link below for complete, up-to-date listing of all routes and schedules flown by the A380. Includes schedules and routes for Qantas, Emirates, Singapore Airlines, and Air France (from Nov09).

Flights from LAX to Sydney are non-stop. The plane flies over water and there really is nowhere for it to stop. You can fly to Sydney with a stop-over in Honolulu, Nadi Fiji or Papeete Tahiti, but these flights are much more expensive.
No direct flights from DEL to SYD. Only 1 stop flights are available. You have to change at Kuala Lumpur, Singapore, Abu Dhabi or Dubai.
The only two airlines offering direct flights from Dubai to Australia are Emirates and Qantas. However, if you don't mind flights with one stop, you can also use Qatar Airways or Singapore Airlines.
