Take 2 cups of shelled peanuts. Soak in water over night to make them soft. put them in a blender or food processor with about 6 cups of water (the more water you add the creamier the cheese). Blend until really creamy and smooth. Then add a 1-2 tablespoons of cultured buttermilk or active plain yogurt and blend that together. When evenly blended take cheesecloth and place it into a strainer over a big bowl. Pour the blender into the cheesecloth and let the liquid drain into the big bowl. Now wrap the cheesecloth around your peanut MASH and put a mason jar filled with water on top of it. This will help drain the liquid out. Let this sit for 12-24 hours (the longer it sits the cheesier it will taste). Also a fun tip the liquid that is draining is probioitic peanut milk you can drink this or even pour on cereal. After the cheese is done sitting unwrap from cheesecloth and eat it or mix with seasonings of your choice. You can also wrap in a saran wrap and place in the fridge to help it solidify and gain more flavor. ENJOY your nutty cheese!
