There was nothing of importance that was omitted from Jefferson's epitaph. At least not according to Jefferson. He wanted only those things that he gave the citizens of Virginia and the United States to be on his tombstone. He wanted nothing of what people gave him. There is no mention of being Governor of Virginia, Ambassador to France, being the first Secretary of State, Vice President or President of the United States. Just as he wanted.
