The champion as of 04/2009 is a 1909-S VDB penny. Numismedia lists a fair market value of $78,000 for the finest known specimen, as of 04/2009.
"VDB" are the initials of the designer, Victor David Brenner. Only 484,000 of these coins were minted with his monogram before a somewhat inexplicable public outcry over his "egotism" forced the Mint to redesign the coin without the initials.
Other high-value wheat cents are all error coins. These include the famous 1943 cents minted on bronze blanks left over from 1942, their less-famous counterparts from 1944 minted on steel blanks, 1922 "plain" cents from Denver that are missing the D mint mark, and 1955 double-die cents.
The 1909 S VDB wheat cent is the rarest to date.
There is no 1873 wheat penny. It is an Indian head penny.
The first US wheat penny minted was the regular 1909.
The rarest regular-issue wheat cents are 1914-D, with retail prices (as of early 2009) in the $2000+ range for uncirculated specimens. The rarest error wheat cents are 1943-S coins accidentally struck on bronze planchets intended for 1942 coins. Uncirculated ones have sold for over $150,000.
1865 would make it an early Indian head penny, not a Lincoln wheat penny. It's not the rarest of dates. In worn condition it's worth around $10, and in uncirculated condition it's worth a little over $100.
