The PS3 does have some 2 player games that are great without requiring online multiplayer, but most games are single player and require an online connection for the multiplayer.

EDIT: There is a game on facebook that is really good called "Monster Galaxy" Try it out its awesome =] (Sorry to say but Stone Age 2 is gone offline and servers are dead)

On Any Mostly All Microsoft Games, To Make An Xlive Offline Account Just Run The Game Normally And Once The Xlive Account Creation Menu Pops Up, Look In The Top Right Hand Corner Of The Menu And It Will Say "create offline account"

You can't go online in offline mode. Offline mode pretty much saves a screenshot of a web page, meaning if you can't access the Internet you can still view the page. Although you will not be able to click any links or visit any other websites that are not saved in offline mode.
