I can only speak for the PC version, as I have never used the wii version, etc.
Unfortunately, you cannot become a vampire on The Sims 3 ambitions. This was liked a lot by Sims 2 fans, so the creators of the Sims 3 gave sims the option to become vampires in the expansion pack-Night Life. If you want to have a vampire sim, then I'm afraid you'll need to buy that expansion pack.
