When he throws a normal punch, rather than defend you need to Dodge (I always go left and always works for me). If you time it right, he'll miss and you can catch him on the chin with a counter. If it's one of his major attacks (the double fisted double swipe type thing) you just need to defend with z. Warning: when you hit space for a punch with extra zip, he'll more than likely dodge it and catch you out, so beware!!
