you take the ethernet cord out of the back of your Xbox 360. Or if you have the wireless network addapter you just unplug it from the back of the xbox 360.

Edit: You just hit the "XBox Button" In the center of the console and at the bottom should say "Xbox Dashboard" Go there and go to your "My account" Section and click and there it should say "log out".

Disconnecting your xbox from xbox live is easy. All you have to do is go to settings and uncheck your wireless router from the selection list.
