You get clay by accomplishing one of two very easy options. 1.) Mining Infinite amounts of clay that are around your Hearthfire home (you'll need a pickaxe, remember to look for a reddish brown discoloration in the ground.) or 2.) You can buy some from at least one Vendor in a hold (whiterun, windhelm, solitude, etc.)
