You can't in the normal Red Dead Redemption, but in the DLC Undead Nightmare Go to Mexico and then open the map, notice the three galloping horses nearest the border? Set a way point at the middle ones Upper thigh. Once you ride there you should find either two white undead or normal Hungarian half Breds, hidden among them is what seems like a normal Hungarian Half Bred but upon a second glance it will have a horn, surrounded by butterflys and rainbows (cute right?) Any it is caught and broken in alike any of the other horses.The Unicorn will only spawn once and will only be broken once, if it dies or runs away you will not find it in that game world again.
