i guess you're in the training quests combining herbs and blue mushrooms.
there are 2 spots to gather them, one is to the left as you enter area 1 from base camp and one again to the left as you enter area 1 from area 2. they are indicated by a small yellow flowering plant. hard to miss it.
from this, you must vigilantly look for some spots in an area that is unique to the area
like mushrooms, unique plants, single plants in the snowy area, rock formations, cracks (to mine using pickaxe), floating tiny lights (to catch using bugnets), skeleton remains, nests, and the likes.
bring a felyne fighter on a quest. when they stop following you, observe and they'll go to a spot, that's a "gathering spot". follow them and press "O".

You can mine it at Pokke farm or at various locations in quests, for example in the Mountains area. Climb and enter the mountain cave and then don't drop down, just walk forward and on your right there is a mark on the wall. Use a Pick-Axe there and you might get iron ore go to f&h you get alot there
Mine the Volcano map (day) that map has many mining point. about 1-3 in every area. bring lots of Pick axe, or if possible some materials to combine into a Pickaxe.
