Wait until a pig approaches the edge of a long drop. Quickly build a two block wall around it, to prevent it going away. Add more blocks so the pig is restricted to standing on one single block, with no way out apart from over the edge. They will not walk off on their own accord, here you need to put the saddle on it and mount it, then punch it. This should make it flee off the edge, to give you the achievement.
