Very carefully. They seem to have a weakness for the King's pawn opening. Remember to establish a good defensive pawn structure, resist the temptation to develop your queen too earlier, and castle at your first opportunity.

(This is clearly from a historical viewpoint and not including any fantasy exceptions. This is according to various European folklore: Preventative measures included:

1.) placing a crucifix in the coffin or blocks under the chin to prevent the body from eating the shroud

2.) nailing clothes to coffin walls for the same reason, or piercing the body with thorns or stakes.

3.) removing the caul from a newborn and destroying it before the baby could eat any of it

4.) careful preparation of dead bodies

5.) preventing animals from passing over the corpse

6.) placing a thorny branch of wild rose in the grave

7.) placing garlic on windows and rubbing it on cattle, especially on St George's & St Andrew's days. Vampires could be destroyed by staking, decapitation (the Kashubs placed the head between the feet), burning, repeating the funeral service, holy water on the grave or exorcism.
