The only way to delete mods easily (when not using a mod installer) is to force Minecraft to update before you log in to Minecraft go to Options and Click Force Update, then log in Minecraft will re-update itself to the current version

Coppy your world somewhere safe and keep the ip. Then delete everything. Download the latest Minecraft_Server and place it where you want, run it, then delete the world and repleace it with your old one. Next open the Server text folder and put in your ip.
