I will presume that you are new to the Xbox 360.

Achievments are built into each Xbox 360 game, even if you don't have live. They are basically challenges that the developers have made that you can do if you get bored.

Whenever you complete an achievement a box will pop up and say achievement unlocked, then say what one. Most games give achievements for completing levels in campaign or doing something difficult.

When you are in a game press the middle button of your controller and it will bring up the Xbo0x menu. Scroll right once and you will see achievements. Go into it and you can see what the games you have played and the achievements for each one.

PS. They do not effect the game unless you need them to unlock something, like armour or weapons.
