lag can't be completely avoided, but you can reduce it by going to your options, and lowering quality features, such as changing fancy graphics to normal graphics
Minecraft typically runs out of memory when you are loading more memory than what your computer can handle. To fix this, you should lower the fog by pressing f, and turn the graphics (esc -> options -> video options -> Graphics: Fancy -> Graphics: Fast) from Fancy to Fast. There is a whole website dedicated to fixing this problem. There are numerous fixes and guides, including reducing the settings as specified above. You may have to change the game graphics from Fancy to Fast, and the render distance from Far to Normal. That's what has worked for me.

There is no "High Definition Mode", but you can hit esc, open Settings, click on Video Settings, and change the graphics, smooth lighting, Clouds, Particles, etc. to make the game look better.

Well, you can help the lag, but you can't stop it completely. You can do this by pausing the game, going into options, and turning down the render distance, turning off smooth lighting, limiting the frame rate, and turning the graphics from fancy to fast. -Also if you have a dual or quad core processor, try restricting Minecraft to using 1 or 2 cpu cores. Go into task manager and click on the processes tab. Find Minecraft in the list. Right click on Minecraft and go to Set Affinity and un-check CPU 2 and 3 (if you have a quad core processor) or just 2 (if you have a dual core processor)
