Rear and kick with both legs. Horses can also canter. Cows can't do any of those things. They can't rear because they're too front-heavy, and they can only kick out with one leg, not both. They also can only walk, trot and gallop/run, but never canter. They can buck, but not to the same level or intensity as a horse can.
Ponies can do the same things that full sized horses can do so long as you make adjustments for their heights. Miniature horses should never be confused with ponies, they should never be ridden.

It depends on how your horse was trained, and his level of training. The standard cue for going faster is to either squeeze with your calves or give a little kick. For a lazy horse that no one has taken the time to properly train to a light squeeze or gentle kick, you may have to use spurs or a whip. Some horses are also trained to respond to a kissing sound, a cluck, moving the reins forward (for western horses) or shifting your weight slightly forward.
In general terms, it is in whatever direction you're facing. I expect you ask because of the requirement that the ball is kicked forward on a kick-off. The definition on a kick-off is "more towards the opponent's goal line than your own."
